What is cheese foam?
Short answer: a salted, lightly sweet whipped cheese cream capping the drink. Sweet meets salty.
What it is
A foam of cream cheese, milk or cream, a little sugar, and salt, whipped and floated on top of tea. A drink topped with it is often called cheese tea.
How it tastes
Rich and savory-sweet, like a salted-cream cap over the tea below. It cuts the sweetness of the drink rather than adding to it.
How to drink it
Skip the straw at first and sip from the rim so the foam mixes with the tea, or stir it in. Tilting the cup gives you both layers at once.
Good pairings
It works well over green or oolong tea and fruit teas. A lightly sweet tea lets the salty foam stand out.
Dairy note
Cheese foam is dairy, and there's no standard non-dairy version, so ask before ordering if that matters to you.
